Cali Breakfast Burrito

Cali Breakfast Burrito

This breakfast burrito is a great way to start your day. It’s an easy, yet filling breakfast that works well on the go, or even for advanced meal prep if frozen and microwaved individually.

Ingredients

  • 2 eggs
  • 1 large tortilla
  • 1 tbsp butter/oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1/2 of an avocado
  • 1 hash brown patty
  • hot sauce of choice (optional)

Instructions

1. Scramble the eggs
Put butter in a skillet over medium-low heat and whisk eggs with some salt, pepper and garlic powder. Cook the eggs until they are set. Put them to the side. Scrambling the eggs works well for this recipe, but this step can be adjusted for preference.

2. Cook hash brown patty
Cook the hash brown patty in the same skillet in a bit of oil over medium heat, about 5 minutes on each side until golden brown. An air fryer can also be used for this step at 400 degrees for 10-12 minutes.

3. Warm tortilla
Warm the tortilla, either in the microwave for about 15 seconds or in the skillet until lightly golden.

4. Prep avocado
Cut avocado and spread about half of it on the warm tortilla.

5. Assemble burrito
Add eggs and hash brown to the tortilla and wrap it into a burrito. Dip in hot sauce or another sauce of choice and enjoy!

US egg prices fall for the first time in months but remain near record highs

Government data shows U.S. retail egg prices have declined for the first time since October. The average price for a dozen Grade A eggs fell to $5.12 in April after reaching a record $6.23 in March, according to the Consumer Price Index released on Tuesday. The average price of eggs of all sizes fell 12.7%, which was the steepest monthly decline since March 1984. Still, U.S. egg prices remain near record highs as a persistent outbreak of bird flu continues to wipe out egg-laying hens. WASHINGTON (AP) — The Trump administration believes a renewed emphasis on biosecurity can help in the battle against bird flu and ease egg prices, but the Agriculture Department predicts the current record prices are going to get much worse this year. It’s also not clear how much more farmers can do to keep the virus out. Agriculture Secretary Brooke Rollins offered the first new details about her bird flu plan Wednesday. As egg prices soar, Trump administration plans new strategy to fight bird flu

MINNEAPOLIS (AP) — With egg prices soaring, the Trump administration is planning a new strategy for fighting bird flu that stresses vaccinations and tighter biosecurity instead of killing off millions of chickens when the disease strikes a flock. The director of the National Economic Council said on CBS’ “Face the Nation” that officials are moving away from the standard practice of destroying all the birds on a farm when an infection is detected. The culling of millions of chickens per month has caused egg prices to skyrocket. Some retailers are rationing sales.
