Onigiri (Japanese Rice Balls)

Onigiri Recipe from All Recipes

Prep time: 40 minutes

Cooking time: 20 minutes

Serving size: 8 servings

Ingredients

  • 4 cups uncooked short-grain white rice
  • 5 ½ cups water, divided
  • ¼ teaspoon salt
  • ¼ cup bonito shavings (dry fish flakes)
  • 2 sheets nori (dry seaweed), cut into 1/2-inch strips
  • 2 tablespoons sesame seeds

Directions

  1. Wash rice in a mesh strainer until water runs clear. Combine washed rice and 4 1/2 cups water in a saucepan. Bring to a boil over high heat, stirring occasionally. Reduce heat to low; cover, and simmer rice until water is absorbed, 15 to 20 minutes. Let rice rest for 15 minutes to continue to steam and become tender. Allow cooked rice to cool.
  2. Combine remaining 1 cup water with salt in a small bowl; use to dampen hands before handling rice. Divide cooked rice into 8 equal portions. Use one portion of rice for each onigiri.
  3. Divide one portion of rice in two. Create a dimple in rice and fill with a heaping teaspoon of bonito flakes. Cover with remaining portion of rice and press lightly to enclose filling inside rice ball. Gently press rice to shape into a triangle; wrap with a strip of nori and sprinkle with sesame seeds. Repeat with remaining portions of rice.

WASHINGTON (AP) — A vaccination to prevent horribly painful shingles may offer an extra benefit: New research suggests it might lower the risk of dementia, too. There have long been hints that certain viruses increase risk for later-in-life dementia, including the virus that causes chickenpox. That virus never leaves the body, hiding in nerves to erupt later when the immune system wanes from illness or age — what’s called shingles. The new study tracked seniors in Wales and found shingles vaccination cut their risk of developing dementia over the next seven years by 20%. WASHINGTON (AP) — The chairman of the House Republican campaign committee is already predicting his party will pick up seats in the midterm election that are some 20 months away. Republican Rep. Richard Hudson of North Carolina also says in an Associated Press interview that the Department of Government Efficiency’s cuts are resonating with voters. Hudson and House Speaker Mike Johnson have told fellow Republicans to skip hosting town hall meetings because the gatherings are being disrupted by protesters angry over the cuts. WASHINGTON (AP) — President Donald Trump has said he wants his new education chief, Linda McMahon, to “put herself out of a job” and close the Education Department. McMahon was confirmed by the Senate on Monday, and an executive order to shut down the department could come as soon as this week. McMahon told employees it was the department’s “final mission” to eliminate bureaucratic bloat and turn over the agency’s authority to states. ACC, Clemson, Florida State approve settlement to end legal fight, change revenue-distribution model

The Atlantic Coast Conference, Clemson and Florida State have approved a settlement that would end their legal fights. The deal would change the league’s revenue-distribution model to factor in viewership ratings in payments to schools. That could benefit the league’s top brands and marquee programs. It also revises and clarifies long-term costs for a school to leave the conference. Each party approved the settlement Tuesday. Commissioner Jim Phillips said in a statement that the league is “united in an 18-member conference” for the future.
