Ingredients

Fried Pickles

  • ½ cup whole buttermilk
  • 1 teaspoon black pepper
  • 1 (16-oz.) jar of dill pickle chips, drained
  • 1 ½ cups finely ground cornmeal
  • ½ cup all-purpose flour
  • Canola oil

Roundhouse-Kick Sauce

  • ½ cup mayonnaise
  • 2 tablespoons chili sauce
  • 1 tablespoon ketchup
  • 1 ½ teaspoons white vinegar
  • 1 ½ teaspoons Sriracha chili sauce
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon dry mustard
  • ⅛ teaspoon black pepper

Directions

  1. For the Roundhouse-Kick Sauce, combine mayonnaise, chili sauce, ketchup, vinegar, Sriracha, Worcestershire sauce, smoked paprika, salt, mustard, and pepper in a bowl. Cover and refrigerate until ready to use.
  2. Combine buttermilk and pepper in a shallow dish. Add pickles and stir to coat.
  3. Stir together cornmeal and flour in another shallow dish. Add a few pickles at a time and toss to evenly coat.
  4. Place the pickles on a baking sheet lined with wax paper or parchment paper.
  5. Pour the oil into a large cast-iron skillet to a depth of 1 inch.
  6. Heat the oil to 365°F over medium-high heat.
  7. Add the pickles in small batches to the oil and fry until golden brown and crisp, about 1 to 2 minutes.
  8. Drain the fried pickles on paper towels and serve with the Roundhouse-Kick Sauce or ranch dressing.

  • 2 medium sweet potatoes, peeled (about 12 oz)
  • 2 teaspoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon sweet paprika
  • Fresh black pepper, to taste

Directions

  1. Preheat the air fryer. Spray the air fryer basket with oil.
  2. Peel each sweet potato and slice into even 1/4-inch thick planks, then into 1/4-inch thick fries.
  3. Submerge sweet potatoes in a large bowl of hot tap water and let them sit for 10 minutes. Drain potatoes, transfer to a paper towel-lined baking sheet, and thoroughly pat dry.
  4. Toss sweet potatoes with 1 teaspoon of the oil then transfer all to the air fryer basket.
  5. Place the basket in the air fryer (no need to preheat) and air fry at 350°F for 8 minutes, shake, and cook for 5 more minutes.
  6. Transfer the sweet potatoes back to the empty bowl and toss them with the remaining oil, salt, and spices.
  7. Spray the basket with oil and return the sweet potatoes to the air fryer.
  8. Increase the temperature to 380°F, and cook until golden brown and crisp, about 4 to 5 minutes, shaking the basket halfway.
  9. Transfer sweet potato fries to a large plate and serve right away with your favorite dipping sauce.

  • 1/4 cup all-purpose flour
  • 1 (12-oz.) can IPA beer
  • 1/4 cup half-and-half
  • 6 oz. shredded fontina cheese
  • 6 oz. shredded sharp yellow cheddar cheese
  • 1 tsp. dijon mustard
  • 1/2 tsp. Worcestershire sauce
  • Chopped chives and/or black pepper, for garnish
  • Pretzels, to serve

Directions

  1. In a medium saucepan, melt the butter over medium-low heat. Add the onion and cook, stirring, until softened, 4 to 6 minutes. Gradually whisk in the flour and cook, whisking constantly, until lightly browned, about 1 minute. 
  2. Whisk in the beer and half and half. Cook, whisking constantly, until the sauce is thickened and just begins to bubble, 5 to 7 minutes. Reduce the heat to low and gradually add the cheeses, whisking constantly, until melted and combined. Remove from the heat.
  3. Whisk in the Dijon mustard and the Worcestershire sauce. Garnish with chives and black pepper, if you like. Serve with pretzels; reheat gently as needed.
  4. Serve the beer cheese warm with pretzels.

Ingredients

  • 4 medium Yukon gold or russet potatoes peeled (about 2.5 lbs)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 Tablespoons melted butter
  • 1 tsp fresh thyme
  • 1 cup chicken broth you can use veggie broth to make vegetarian
  • 2 cloves garlic minced

Directions

  1. Preheat oven to 450°F.
  2. Whisk together butter, salt, pepper, and thyme in a small bowl.
  3. Slice your potatoes into about 1-inch rounds and place them in a large bowl. Pour the butter mixture over the potatoes and mix to coat.
  4. On the baking sheet (we used a 9″x13″1″ baking sheet) layer the potatoes in a single layer.
  5. Place in oven and roast for 20 minutes. Flip potatoes and then roast for another 15 minutes.
  6. Meanwhile, mix together your chicken broth and garlic. Remove potatoes from oven, flip one more time, and pour broth mixture over potatoes. Place back in the oven and roast for another 15 minutes.
  7. Remove and drizzle with sauce and top with more fresh thyme if desired.

  • ¼ cup full-fat Greek yogurt

Fish Sticks:

  • 1 ½ lbs skinless wild cod, sea bass, or haddock fillets, if frozen thawed
  • 2 large eggs, beaten
  • 1 tablespoon Dijon mustard
  • ½ lemon, squeezed
  • ¼ teaspoon paprika
  • ¼ teaspoon kosher salt
  • 1 cup plus 2 tablespoons seasoned panko breadcrumbs, regular or gluten-free

Directions

  1. Cut the fish into 16 sticks.
  2. Combine the ingredients for the tartar sauce in a small bowl and refrigerate until ready to eat.
  3. Combine eggs, Dijon mustard, lemon juice, paprika, and salt in a bowl.
  4. In a second bowl combine the Panko crumbs with Old Bay seasoning.
  5. Dip the fish into the egg mixture, then the panko. Set aside.
  6. Transfer to the air fryer basket, in batches as needed, and spray both sides with olive oil. Air fry at 400°F for about 8 minutes, turning halfway, until golden and crisp.
  7. Serve warm with tartar sauce.

Baked Apple Cider Donuts Recipe by Sally from Sally’s Baking Recipes.

Ingredients

  • 1 ½ cups (360ml) apple cider
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 2 Tablespoons (28g) unsalted butter, melted
  • 1 large egg, at room temperature
  • ½ cup (100g) packed light or dark brown sugar
  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) milk, at room temperature
  • 1 teaspoon pure vanilla extract

Topping

  • 1 cup (200g) granulated sugar
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon apple pie spice*
  • 6 Tablespoons (85g) unsalted butter, melted

Directions

  1. Reduce the apple cider: Stirring occasionally, simmer the apple cider in a small saucepan over low heat until you’re left with about ½ cup. Start checking at 10 minutes, 15 minutes, 20 minutes, etc until you have ½ cup (120ml). Mine takes about 20 minutes. If there are any spices or solids on top of your reduced apple cider, leave them. Set aside to cool for 10 minutes.
  2. Preheat oven to 350°F (177°C). Spray the donut pan with non-stick spray. Set aside.
  3. Make the donuts: Whisk the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt together in a large bowl. Set aside.
  4. Whisk the melted butter, egg, brown sugar, granulated sugar, milk, and vanilla extract together. Pour into the dry ingredients, add the reduced apple cider, and whisk everything together until smooth and combined. Battery will be slightly thick.
  5. Spoon the batter into the donut cavities—for ease, I highly recommend using a large zipped-top bag. Cut a corner off the bottom of the bag and pipe the batter into each donut cup, filling about halfway.
  6. Bake for 10-11 minutes or until the edges and tops are lightly browned. To test, poke your finger into the top of the donut. If the donut bounces back, they’re done. Cool donuts for 2 minutes then transfer to a wire rack. Re-grease the pan and bake the remaining donut batter.

Coat the donuts:

  1. Combine the granulated sugar, cinnamon, and apple pie spice together in a medium bowl. Once cool enough to handle, dunk both sides of each donut in the melted butter, then generously in the apple spice topping.
  2. Donuts are best served immediately. Leftovers can be kept well-covered tightly at room temperature for up to 2 days or in the refrigerator for up to 5 days.

  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil

Directions

  1. Preheat oven to 350°F.
  2. Spread chopped walnuts evenly on a baking sheet and toast in the preheated oven for about 8 minutes.
  3. in a small bowl, combine honey, balsamic vinegar, and olive oil to make a dressing.
  4. Core and chop the apples.
  5. In a large salad bowl, toss the arugula with the prepared dressing until evenly coated.
  6. Top the dressed arugula with chopped apples, dried cranberries, toasted walnuts, and crumbled goat cheese.
  7. Serve the fall salad as a side or main and enjoy!

The Carolina Hurricanes’ journey began in 1971 as the New England Whalers in the World Hockey Association. In 1979, they transitioned to the NHL as the Hartford Whalers. The biggest change for the franchise occurred in 1997 when they relocated to Raleigh, North Carolina, becoming the Carolina Hurricanes we know today.

The 2005-2006 season was unforgettable for the Carolina Hurricanes as they won the Stanley Cup. Under the leadership of captain Rod Brind’Amour, the team beat the Edmonton Oilers in a thrilling seven-game series. Brind’Amour, now the head coach, has impressively led the Hurricanes to the playoffs every season since 2018.

In 1997, the Hurricanes made their first NHL draft pick, selecting Greek player Nikos Tselios 22nd overall. He wrapped up that season with the AHL’s Lowell Lock Monsters. In 2003, Eric Staal was picked second overall and became the first player post-relocation to surpass 1,000 NHL games.

Meet Stormy, the Carolina Hurricanes’ mascot, proudly sporting number 97 in honor of the year the team relocated. Representing Eastern North Carolina’s rich hog farming history, Stormy the Ice Hog was a playful nod to the area’s culture. The team initially considered the name “Ice Hogs” but ultimately settled on the Hurricanes.

In 2019, commentator Don Cherry dubbed the Hurricanes a “bunch of jerks” for their creative post-win celebrations, known as Storm Surges. These playful antics included themes like fishing, boxing, lightsaber duels, and basketball. Ingredients

  • 4 medium to large cloves of garlic
  • 1/2 teaspoon kosher salt, or more, to taste
  • 2 large egg yolks
  • 1 cup Spanish extra-virgin olive oil
  • 1 1/2 tablespoons fresh lemon juice

Directions

  1. Peel and mince the garlic.
  2. Using the flat side of a large knife, crush the garlic.
  3. Crush the garlic and salt into a paste. (Save time by using a garlic press that peels and mashes the garlic in one step.)
  4. Crack the eggs and separate the yolks into a small mixing bowl.
  5. Transfer the garlic paste to the bowl and whisk to blend.
  6. With a hand mixer on low speed, slowly pour in the olive oil in a very thin, steady stream until a creamy sauce begins to form.
  7. Add the touch of lemon juice slowly at the end, while keeping the mixer on to ensure that the sauce stays smooth.
  8. Serve with fish, as a condiment for your favorite sandwich, or as a dipping sauce for French fries. Enjoy.
