Servings: 16 servings

Ingredients

  • 3 ⅔ cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups milk
  • 3 large eggs
  • ¼ cup white sugar
  • 1-quart vegetable oil for frying, or as needed
  • 2 tablespoons confectioners’ sugar, or as needed

Directions

  1. Mix ½ of the flour, baking powder, and salt in a bowl; set aside.
  2. Beat together milk, eggs, and sugar in a bowl. Add the flour mixture and combine until smooth. Add the remaining flour until the batter becomes runny and thin enough to flow through a funnel. 
  3. Heat 1 inch of oil in an 8-inch skillet at 375°F.
  4. Stop the hole of the funnel with your finger and fill it with ½ cup of batter. Release the batter over the hot oil, making circular motions.
  5. Fry until the bottom is golden brown; approximately 1 to 2 minutes.
  6. Use tongs and a spatula to turn the funnel cake and fry for about another minute.
  7. Drain the funnel cake on a paper towel-lined plate and sprinkle with confectioner sugar.
  8. Repeat until all the batter is gone.
  9. Serve the funnel cakes while warm. You can top it with more confectioner sugar, strawberries, ice cream, and/or chocolate syrup. Enjoy!

Ingredients

  • 4 (6- to 8-oz.) russet potatoes
  • 2 Tbsp extra-virgin olive oil
  • 2 tsp crushed red pepper flakes
  • 1 1/2 tsp kosher salt, divided
  • 2 slices thick-cut bacon
  • 4 oz sharp cheddar, finely shredded
  • 1/4 cup sour cream 
  • 1 Tbsp. fresh lemon juice
  • 2 scallions, sliced into thin rounds

Directions

  1. Preheat the oven to 425°F, and arrange two racks in the upper and lower third of the oven.
  2. Pierce the potatoes all over with a fork, place on a heatproof plate, and microwave until softened; approximately 3 minutes. Let cool slightly.
  3. Poke a skewer through the bottom of the potatoes.
  4. Holding the potato steady on a cutting board, using a chef’s knife, cut a spiral at an angle around the potato while rotating the potato in the opposite direction, cutting through to the skewer, and trying to keep spirals as thin as possible. You can also cut thin diagonal slices on one side of the potato, flip, then cut diagonal slices on the opposite side. Carefully pull layers apart. Repeat with remaining potatoes.
  5. Arrange the potatoes on a baking sheet. Rub the potatoes with oil, crushed red pepper flakes, and 1 tsp of salt.
  6. Roast potatoes on the bottom rack until the potatoes can be pierced with no resistance; approximately 45 minutes to 1 hour.
  7. While the potatoes bake, cook bacon on the top rack until crispy; approximately 20 to 25 minutes. Let cool and crumble into bite-sized pieces.
  8. Sprinkle cheese on top and in between the spirals of the potato. Turn on the broiler and broil the potatoes until the cheese is melted; approximately 2 to 3 minutes.
  9. Combine sour cream, lemon juice, and remaining ½ tsp of salt in a small bowl. Top with bacon and scallions.

  • 2 quarts of corn oil for frying
  • 1 cup all-purpose flour
  • ¾ cup beer
  • 2 eggs
  • ½ teaspoon salt
  • 2 pounds of cheese curds, broken apart

Directions

  1. Heat the corn oil in a deep fryer or large saucepan to 375°F.
  2. Whisk together flour, beer, milk, eggs, and salt to form a smooth, rather thin batter.
  3. Place cheese curds, about 6 to 8 at a time, into the batter. Stir to coat and remove with a wire strainer.
  4. Shake the curds to remove excess batter.
  5. Deep fry the curds in hot oil until golden brown, about 1 to 2 minutes.
  6. Drain the cheese curds on a paper towel, serve hot, and enjoy!

Ingredients

  • 1 ½ cups water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 tablespoon active dry yeast
  • 4 ½ cups all-purpose flour
  • ¼ cup butter, melted
  • Vegetable oil, for pan
  • 10 cups water
  • ⅔ cup baking soda
  • 2 tablespoons butter, regular or unsalted, melted
  • Coarse sea salt, or kosher salt for sprinkling
  • 8 hot dogs, good quality

Directions

  1. Combine the water, sugar, and yeast in the bowl of a stand mixer. Let sit for 5 minutes or until the mixture begins to foam.
  2. Add the flour, salt, and butter. Combine with a spoon or the paddle until combined, then switch to the dough hook on low speed until well combined.
  3. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Add more flour if needed.
  4. Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour. The dough should double in size.
  5. Preheat the oven to 450°F. Line two baking sheets with parchment paper and lightly brush with the vegetable oil.
  6. In a large pot, bring 10 cups of water and the baking soda to a rolling boil.
  7. Knead down the dough and turn it out onto a lightly floured work surface. Divide into 8 equal pieces.
  8. Roll out each piece of dough into a rope that’s about 20 to 24 inches long, depending on the hot dog’s size.
  9. Starting at one end, wrap the dough around the hot dog, pinching each end together so that it’s sealed. Place onto the pan and repeat with the remaining dough and hot dogs.
  10. Place the pretzel dogs into the boiling water two at a time boil for 30 seconds and then remove. 
  11. Return the boiled pretzel dogs to the pan, brush the tops with melted butter, and sprinkle with the sea salt.
  12. Bake until dark golden brown, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.
  13. Serve the pretzel dogs with ketchup, mustard or plain. Enjoy!

  1. Heat oil in a deep fryer or large saucepan to 375°F.
  2. Whisk together the milk, egg, and 2 teaspoons of vegetable oil in a large bowl until smooth. Stir in the pancake mix until fully combined with no clumps.
  3. Dip the cookies into the batter, one at a time, and carefully place them into the hot oil. Fry in batches of 4 to 5 for about 2 minutes, until the cookies are golden brown.

Ingredients

Fried Pickles

  • ½ cup whole buttermilk
  • 1 teaspoon black pepper
  • 1 (16-oz.) jar of dill pickle chips, drained
  • 1 ½ cups finely ground cornmeal
  • ½ cup all-purpose flour
  • Canola oil

Roundhouse-Kick Sauce

  • ½ cup mayonnaise
  • 2 tablespoons chili sauce
  • 1 tablespoon ketchup
  • 1 ½ teaspoons white vinegar
  • 1 ½ teaspoons Sriracha chili sauce
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon dry mustard
  • ⅛ teaspoon black pepper

Directions

  1. For the Roundhouse-Kick Sauce, combine mayonnaise, chili sauce, ketchup, vinegar, Sriracha, Worcestershire sauce, smoked paprika, salt, mustard, and pepper in a bowl. Cover and refrigerate until ready to use.
  2. Combine buttermilk and pepper in a shallow dish. Add pickles and stir to coat.
  3. Stir together cornmeal and flour in another shallow dish. Add a few pickles at a time and toss to evenly coat.
  4. Place the pickles on a baking sheet lined with wax paper or parchment paper.
  5. Pour the oil into a large cast-iron skillet to a depth of 1 inch.
  6. Heat the oil to 365°F over medium-high heat.
  7. Add the pickles in small batches to the oil and fry until golden brown and crisp, about 1 to 2 minutes.
  8. Drain the fried pickles on paper towels and serve with the Roundhouse-Kick Sauce or ranch dressing.

  • 2 medium sweet potatoes, peeled (about 12 oz)
  • 2 teaspoons olive oil
  • ½ teaspoon kosher salt

Directions

  1. Preheat the air fryer. Spray the air fryer basket with oil.
  2. Peel each sweet potato and slice into even 1/4-inch thick planks, then into 1/4-inch thick fries.
  3. Submerge sweet potatoes in a large bowl of hot tap water and let them sit for 10 minutes. Drain potatoes, transfer to a paper towel-lined baking sheet, and thoroughly pat dry.
  4. Toss sweet potatoes with 1 teaspoon of the oil then transfer all to the air fryer basket.
  5. Place the basket in the air fryer (no need to preheat) and air fry at 350°F for 8 minutes, shake, and cook for 5 more minutes.
  6. Transfer the sweet potatoes back to the empty bowl and toss them with the remaining oil, salt, and spices.
  7. Spray the basket with oil and return the sweet potatoes to the air fryer.
  8. Increase the temperature to 380°F, and cook until golden brown and crisp, about 4 to 5 minutes, shaking the basket halfway.
  9. Transfer sweet potato fries to a large plate and serve right away with your favorite dipping sauce.

  • 1/4 cup half-and-half
  • 6 oz. shredded fontina cheese
  • 6 oz. shredded sharp yellow cheddar cheese
  • 1 tsp. dijon mustard
  • 1/2 tsp. Worcestershire sauce
  • Chopped chives and/or black pepper, for garnish
  • Pretzels, to serve

  1. In a medium saucepan, melt the butter over medium-low heat. Add the onion and cook, stirring, until softened, 4 to 6 minutes. Gradually whisk in the flour and cook, whisking constantly, until lightly browned, about 1 minute. 
  2. Whisk in the beer and half and half. Cook, whisking constantly, until the sauce is thickened and just begins to bubble, 5 to 7 minutes. Reduce the heat to low and gradually add the cheeses, whisking constantly, until melted and combined. Remove from the heat.
  3. Whisk in the Dijon mustard and the Worcestershire sauce. Garnish with chives and black pepper, if you like. Serve with pretzels; reheat gently as needed.
  4. Serve the beer cheese warm with pretzels.

Ingredients

  • 4 medium Yukon gold or russet potatoes peeled (about 2.5 lbs)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 Tablespoons melted butter
  • 1 tsp fresh thyme
  • 1 cup chicken broth you can use veggie broth to make vegetarian
  • 2 cloves garlic minced

Directions

  1. Preheat oven to 450°F.
  2. Whisk together butter, salt, pepper, and thyme in a small bowl.
  3. Slice your potatoes into about 1-inch rounds and place them in a large bowl. Pour the butter mixture over the potatoes and mix to coat.
  4. On the baking sheet (we used a 9″x13″1″ baking sheet) layer the potatoes in a single layer.
  5. Place in oven and roast for 20 minutes. Flip potatoes and then roast for another 15 minutes.
  6. Meanwhile, mix together your chicken broth and garlic. Remove potatoes from oven, flip one more time, and pour broth mixture over potatoes. Place back in the oven and roast for another 15 minutes.
  7. Remove and drizzle with sauce and top with more fresh thyme if desired.
