Ingredients

  • 1 to 2 butternut squashes, depending on size (neck should be 3 to 5 inches long)
  • 2 tablespoons olive oil
  • 1 to 2 tablespoons unsalted butter
  • 2 tablespoons grated Parmesan cheese, more to taste
  • 1/4 teaspoon fine salt, more to taste
  • 1/4 teaspoon freshly ground black pepper, more to taste

Directions

  1. Prepare the Butternut Squash: Wash the butternut squash, then cut it in half crosswise to separate the long neck from the round bottom. Peel the neck portion, saving the round bottom for another use (you can peel, chop, and roast it separately).
  2. Make the Noodles: Cut the peeled squash neck to fit your spiralizer, following the instructions. Use the shredder blade to create spaghetti-like noodles (about 4 cups).
  3. Dry the Noodles: Place the noodles on paper towels or a clean dish towel, cover with more towels, and gently press to remove any excess moisture.
  4. Cook the Noodles: Heat a large skillet over medium-high heat, adding oil once hot. When the oil shimmers, add the noodles. Reduce heat to medium and cook, stirring occasionally, until tender and lightly golden, about 4-6 minutes.

Finish with Butter and Cheese: Add butter to the skillet, stirring until it melts and coats the noodles, about 1 minute. Sprinkle with Parmesan and toss. If the noodles are too thick, add water 1 tablespoon at a time to loosen. Season with salt and pepper to taste, then serve warm.

  • 4 tablespoons unsalted butter
  • 1 bunch leeks (white and light green parts only), thinly sliced and rinsed well
  • 1 onion, sliced
  • 2 russet potatoes (about 1 pound), peeled and sliced

  • 4 cups low-sodium chicken broth
  • 1 bay leaf
  • 1/2 cup heavy cream
  • 2 slices thick-cut bacon, chopped

Directions

  1. Sauté the Vegetables: In a large pot or Dutch oven, melt the butter over medium heat. Add the leeks and onion, cooking for about 5 minutes until softened. Add the potatoes, garlic, 1 teaspoon salt, and pepper. Stir and cook for 2 minutes until well coated.
  2. Simmer the Soup: Add 3 cups water, chicken broth, and bay leaf. Bring to a boil, then reduce to a simmer. Cook for 15 minutes or until the potatoes are very tender. Remove the bay leaf.
  3. Blend the Soup: Working in batches, blend the soup until smooth. Return to the pot, stir in the cream, and adjust the seasoning with salt and pepper. Keep the soup warm over low heat.
  4. Cook the Bacon and Pierogi: In a nonstick skillet, cook the bacon over medium heat until crisp, about 7 minutes. Transfer to paper towels. In the same skillet, cook the pierogi, flipping halfway, until golden and heated through about 5 minutes.
  5. Serve: Ladle the soup into bowls and top each with pierogi, bacon, and chives. Serve warm.

RALEIGH CHRISTMAS PARADE

November 23rd

The 2024 Raleigh Christmas Parade will take place on November 23rd at 9:30 am and stands as the largest parade between Atlanta and Washington DC. As the parade makes its way down the 1.4-mile route, there is something for everyone. Over its 2-hour duration, attendees can enjoy local marching bands, various organizations, balloons, dancers, and floats. This year marks the 80th anniversary of the Raleigh Christmas Parade!

Christmas at Biltmore will run from November 2nd to January 5th. Tickets, which range from $110 to $420 per person depending on the package, offer various experiences.   • ⅔ cup sugar
  • ⅓ cup light brown sugar, tightly packed
  • ⅓ cup water
  • ⅔ cup orange juice

Directions

  1. Combine sugars, water, and orange juice in a medium-sized saucepan over medium heat.  Stir occasionally until sugars are dissolved, and bring to a boil.  
  2. ⅔ cup sugar,⅓ cup light brown sugar, tightly packed,⅓ cup water,⅔ cup orange juice
  3. Add cranberries and return to a boil.
  4. 12 oz cranberries
  5. Reduce heat to a simmer and continue to cook cranberries, stirring occasionally, for 10-15 minutes or until all or most berries have burst (careful, there is some splatter) and the mixture is slightly reduced. The longer you cook your cranberries the thicker your mixture will be, but it will also thicken up after standing.
  6. Transfer the mixture to a bowl and allow it to cool for at least 20 minutes at room temperature.
  7. Cover and refrigerate at least 2 hours before serving.

  • 1 ½ teaspoons ground ginger
  • ½ teaspoon cinnamon

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cake mix, ginger, and cinnamon.
  3. Stir in the egg, oil, and molasses until a soft dough forms.
  4. Use a tablespoon to form about 20 cookies. Space them about an inch apart on the lined baking sheet.
  5. Bake at 350°F for 10-12 minutes, or until the cookies are set and slightly golden.
  6. Allow the cookies to cool on the baking sheet for 5 minutes.
  7. Transfer them to a wire sheet to finish cooling.
  8. Serve the ginger spice cookies and enjoy!

Ingredients

  • Greek extra virgin olive oil
  • 1 small yellow onion, chopped
  • 1/2 lb ground beef
  • Kosher salt + black pepper
  • 1 tsp ground allspice
  • 2 garlic cloves, minced (or 1 tsp garlic powder)
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1 small bunch fresh parsley, chopped ( about 1 cup packed fresh parsley. Or a mixture of chopped fresh parsley and fresh dill)
  • 1 cup white rice, soaked in water for 2o to 30 minutes, then drained
  • 3/4 tsp hot or sweet paprika
  • 1/4 cup  tomato sauce
  • 2 1/4 cup water
  • 6 bell peppers, any colors, tops removed and cored
  • 3/4 cup chicken broth (or water)

Directions

  1. Cook the Meat and Chickpeas: In a medium pot, heat 1 tablespoon of olive oil. Sauté the onions until golden. Add the meat and cook on medium-high, stirring occasionally, until browned. Season with salt, pepper, allspice, and garlic. Stir in the chickpeas and cook briefly.
  2. Add Rice and Cook: Add parsley, soaked and drained rice, paprika, and tomato sauce to the pot. Stir to combine. Pour in water and bring to a high simmer until the liquid reduces by half. Lower the heat, cover, and cook for 20 minutes, or until the rice is fully cooked. Adjust seasoning to taste.
  3. Grill the Peppers: Heat a grill or skillet over medium-high while the rice cooks. Cover and grill the bell peppers for 10-15 minutes, turning as needed until softened and lightly charred. Set aside to cool slightly.
  4. Preheat Oven and Assemble Peppers: Preheat the oven to 350°F. Arrange the peppers open-side up in a baking dish with 3/4 cup broth or water. Fill each pepper with the meat, rice, and chickpea mixture.
  5. Cover and Bake: Cover the dish with foil (without touching the peppers) and bake on the middle rack for 20-30 minutes.
  6. Serve: Remove from the oven, garnish with parsley if desired, and serve warm. Pair with Tzatziki sauce and a Greek salad for a Greek-style main dish.

  • 1 (7 to 8 ounce) prepared pie crust (1/2 of a 14 ounce package; see Tip)
  • ½ cup prepared cranberry sauce or homemade
  • 3 ounces Brie cheese, cut into 24 pieces, divided
  • 1 tablespoon chopped fresh chives (Optional)

Directions

  1. Preheat the oven to 450°F and lightly spray a mini muffin tin with cooking spray.
  2. Roll out the pie crust on a flat surface to about 12 inches in diameter. Use a 2-inch biscuit cutter to cut out 24 circles from the dough, rerolling scraps if needed.
  3. Press each dough circle into a muffin cup and prick with a fork. Bake for 5-7 minutes, or until lightly browned. Remove from oven.
  4. Place 1 teaspoon of cranberry sauce in each cup, then top with a piece of Brie.
  5. Return to the oven and bake for another 5 minutes, or until the cheese is melted and the sauce is hot.
  6. Let cool for 10 minutes. Sprinkle with chives if desired, and serve warm.

  • 1 tablespoon active dry yeast
  • 3/4 cup warm water (110° to 115°)
  • 3/4 cup canned pumpkin

  • 1-1/2 teaspoons each of minced fresh oregano, sage, rosemary, and thyme

  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup butter, melted, optional

  1. In a small bowl, dissolve the yeast in warm water.
  2. Mix the pumpkin, garlic powder, onion powder, minced onion, fresh herbs, salt, cayenne, yeast mixture, and 1 1/2 cups of flour in a large bowl. Beat on medium speed until smooth.
  3. Gradually add the rest of the flour until a soft, sticky dough forms. Stir in the cheese.
  4. On a floured surface, knead the dough until smooth and elastic (6-8 minutes). Place in a greased bowl, turning to coat. Cover and let rise in a warm place until doubled, about 1 1/2 hours.
  5. Punch down the dough, then turn it onto a lightly floured surface. Divide and shape it into 12 balls, flattening slightly. Wrap each ball with 4 pieces of kitchen string to create pumpkin-like indentations.
  6. Place rolls 2 inches apart on greased baking sheets. Cover with kitchen towels and let rise in a warm place until almost doubled about 45 minutes.
  7. Preheat the oven to 375°F. Bake the rolls until golden brown, 15-20 minutes. Brush with melted butter if desired.
  8. Let the rolls cool on wire racks, then cut and remove the string. Before serving, insert a pretzel half into the top of each roll as a “stem.”

Directions

  1. Heat a skillet over medium heat while you make your cinnamon French toast mixture.
  2. Whisk together the milk, eggs, vanilla extract, and cinnamon in a bowl.
  3. Dip each slice of bread in the egg mixture, coating both sides evenly.
  4. Place each coated slice of bread onto the heated skillet.
  5. Cook each side for 3-4 minutes or until golden brown.
  6. Serve your french toast hot, optionally with syrup and powdered sugar.
  7. Enjoy!

  • 4 large artichokes
  • 2 lemons
  • 1/2 cup pine nuts
  • 1/2 cup pitted green olives
  • 1 bunch fresh parsley, chopped
  • 3/4 cup whole wheat bread crumbs
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 cup white wine
  • 1/8 teaspoon red chile flake

Directions

  1. Preheat oven to 350°F (175°C).
  2. Prepare lemon water: Zest the lemons and set the zest aside. Mix the juice of both lemons in a large bowl with about 8 cups of cold water. This will be the bath for your artichokes to keep them from browning.
  3. Prep the artichokes:
  • Trim off the woody end.
  • Peel the stem with a paring knife and remove any tough outer leaves.
  • Cut the bottom stem for a flat base (save the stem).
  • Trim off the top third of the artichoke with a serrated knife.
  • Open the leaves, scoop out the inner pink thistle, and place the artichoke and stem in the lemon water while you prep the others.
  1. Make the breadcrumb filling:
  • Toast pine nuts at 350°F for 4-5 minutes until golden, then increase the oven to 400°F.
  • Chop parsley, toasted pine nuts, and olives.
  • Mix chopped parsley, olives, pine nuts, bread crumbs, and nutritional yeast in a bowl, seasoning with salt and pepper.
  1. Stuff and bake the artichokes:
  • Stuff each artichoke with about 1/4 of the breadcrumb mixture, pressing it in firmly.
  • Place the stuffed artichokes and stems in a baking dish. Pour wine into the bottom, sprinkle red chile flakes over the artichokes, and add 2 cups of lemon water.
  • Cover and bake at 400°F for 30 minutes, then uncover and bake another 20-25 minutes.
