Ingredients

  • 1/4 c. warm water (about 110º)
  • 1 Tbsp. active dry yeast
  • 1 1/2 Tbsp. granulated sugar
  • 1 c. whole milk, warm (about 110º)
  • 2 large eggs, beaten
  • 1 3/4 tsp. kosher salt
  • 1 c. unsalted butter, melted
  • 5 c. bread flour
  • Nonstick cooking spray
  • For the Garlic Butter:
  • 1/2 c. unsalted butter
  • 8 garlic cloves, grated
  • 1 tsp. kosher salt
  • 1/4 c. finely chopped parsley
  • 1 Tbsp. finely chopped rosemary
  • 1/4 c. shredded parmesan cheese

Directions

  1. For the dough, whisk together the water, yeast and 1/2 tablespoon of the sugar in a small bowl. Let stand until foamy, about 5 minutes. 
  2. Beat the milk, eggs, salt, butter, yeast mixture, and remaining 1 tablespoon of the sugar on medium-low in the bowl of a stand mixer fitted with a dough hook attachment until well combined, about 10 seconds. With the mixer on medium-low, gradually add the flour. Once the flour is incorporated, increase the speed to medium and beat the dough until smooth and elastic, 6 to 8 minutes. Transfer the dough to a lightly greased bowl and cover tightly with plastic wrap. Let stand until doubled in size, 1 to 1 1/2 hours.
  3. For the garlic butter, combine the butter, garlic, and salt in a small saucepan. Heat over medium-low heat, stirring occasionally, until the butter is melted, about 5 minutes. Remove from the heat and stir in the parsley and rosemary. Set aside 1 tablespoon of the garlic butter for brushing on the baked loaves.
  4. Lightly grease 2 (9-by-5-inch) loaf pans. Turn the dough out onto a lightly floured surface. Divide the dough into 40 (about 1 ounce) pieces; shape into balls. Roll 20 dough balls in the garlic butter and arrange in the bottom of the prepared loaf pans. Sprinkle with half of the parmesan. Repeat with the remaining dough balls, garlic butter, and parmesan. Drizzle any remaining garlic butter evenly over the loaves.
  5. Cover the pans loosely with plastic wrap and let rise until doubled in size, 45 minutes to 1 hour. Preheat the oven to 350° during the last 20 minutes of rise time.
  6. Uncover the loaves and discard the plastic wrap. Bake until the tops are golden brown and a thermometer inserted in the center registers 200°, 35 to 40 minutes. Remove from the oven and brush the tops with the remaining 1 tablespoon of garlic butter, reheating the butter gently over low heat if needed to melt. Cool the loaves in the pans on a wire rack for 5 minutes. Carefully remove the loaves from the pans. Serve warm.

  • 1/2 pound ground beef
  • 1/4 onion – diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder – or chipotle chili powder
  • 1/2 teaspoon salt
  • 4 ounces diced green chiles
  • 4 ounces diced pimento peppers
  • 2 tablespoons tomato paste
  • 1/2 cup shredded sharp cheddar cheese – or Mexican blend
  • 2 refrigerated pie crusts
  • 1 egg – whisked

Directions

  1. Preheat oven to 400°F and line a baking sheet with a nonstick baking mat or parchment paper.
  2. Unroll pie crusts on a clean, flat surface. Use a 3-inch round pastry cutter to cut circles from the dough. (If desired, combine scraps, roll out, and cut again.)
  3. In a skillet over medium-high heat, brown the ground beef.
  4. Stir in onions, cumin, chili powder, salt, green chiles, and pimento peppers. Saute 2-3 minutes.
  5. Stir in tomato paste, followed by the cheese. Remove from heat.
  6. Spoon about 2 tablespoons of the beef mixture into the center of each pie crust circle.
  7. Fold dough over and use a fork to seal the dough all along the curved edge.
  8. Arrange in a single layer, not touching, on prepared baking sheet. Brush empanadas with egg wash.
  9. Bake for 10 minutes or until golden brown.
  10. Allow to cool slightly before serving with HERDEZ™ Traditional Guacamole. Enjoy!

  • 1/4 pound sliced bacon, cut crosswise into thin strips
  • 1 large onion, chopped
  • 3 pounds baking potatoes (about 6), peeled and cut into 1-inch cubes
  • 4 1/2 cups water
  • 1 teaspoon kosher salt
  • 6 ounces cheddar, grated (about 1 1/2 cups)
  • 1/4 cup chopped chives or scallion tops, for serving

Directions

  1. In a large saucepan, cook the bacon over moderate heat until crisp. Remove the bacon with a slotted spoon and drain on paper towels. Pour off all but 2 tablespoons of the bacon fat; if you don’t have 2 tablespoons, add enough cooking oil to make up the amount. Reduce the heat to moderately low.
  2. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  3. Stir in the potatoes, water, and salt and bring to a boil.
  4. Reduce the heat and simmer, covered, stirring occasionally, until the potatoes are tender, 15 to 20 minutes.
  5. Remove half the soup from the pan and puree in a food processor. Alternatively, mash some of the potatoes with a potato masher.
  6. Return the puree to the pan. Over low heat, add the cheese and stir until melted.
  7. Remove the pan from the heat. Taste the soup and add more salt if needed.
  8. Top the soup with the bacon and chives to serve.

  • 1 medium garlic clove, halved
  • 3 tablespoons unsalted butter, at room temperature
  • 3 pounds medium-size red potatoes, unpeeled and cut into 1/8-inch-thick slices
  • 1 medium-size (9 ounce) yellow onion, thinly sliced (about 2 cups) 
  • 1 tablespoon all-purpose flour
  • 1 ¾ cups heavy whipping cream
  • 2 ½ teaspoons kosher salt
  • 1 teaspoon dry mustard
  • ⅛ teaspoon freshly grated nutmeg
  • 6 ounces sharp white cheddar cheese, shredded (about 1 1/2 cups), divided
  • 4 ounces Gruyère cheese, shredded (about 1 cup), divided
  • 2 teaspoons thinly sliced fresh chives

Directions

  1. Preheat oven to 325°F. Rub cut sides of garlic all over inside of a 2 1/2- to 3-quart oval broiler-safe baking dish; discard garlic. Rub inside of dish with 1 tablespoon butter; set aside.
  2. Arrange potato and onion slices, standing slightly vertically on edges, in slightly overlapping concentric circles in the baking dish. Tuck smaller potato and onion slices into any gaps in dish to fill. Cover with a damp paper towel until ready to use.
  3. Heat remaining 2 tablespoons butter in a medium saucepan over medium until melted and foaming. Add flour; cook, whisking constantly, for 1 minute. Slowly whisk in cream until smooth. Whisk in salt, mustard, and nutmeg. Bring to a simmer over medium, whisking constantly. Remove from heat. Whisk in 3/4 cup of the Cheddar and 1/2 cup of the Gruyère, 1 handful at a time, until melted and smooth. Pour evenly over potato mixture. Sprinkle with remaining 3/4 cup Cheddar and 1/2 cup Gruyère.
  4. Cover baking dish with aluminum foil. Bake in preheated oven until cream is bubbling, cheese has melted, and potatoes are tender when pierced with a fork, 1 hour to 1 hour, 15 minutes. Carefully remove foil from baking dish, while keeping dish in oven. Increase oven temperature to broil. Broil gratin until cheese is bubbly and browned in spots, checking occasionally to prevent over-browning, 5 to 8 minutes. Remove from oven. Let stand 20 minutes. Sprinkle with chives and serve.

  1. Cut a thin slice off the top of each tomato. Scoop out and discard pulp. Invert tomatoes onto paper towels to drain. Combine cheese and onion; spoon into tomatoes.

  • 27 mini marshmallows

Directions

  1. Line a small 9 x 13-inch sheet pan with parchment paper. Set aside.
  2. Using the edible markers, make a snowman face on 9 small marshmallows. Plan where you will be placing the snowman so they will be easy to cut equally later.
  3. Have your pretzels cut and ready because once the chocolate hardens they won’t stick.
  4. Pour the chocolate into a medium microwave-safe bowl. Melt the chocolate in the microwave, stirring the chocolate every 30 seconds to help avoid seizing.
  5. Once melted and smooth, set aside. This took me about 1 1/2 to 2 minutes, but will vary with every microwave. When you’re ready, pour chocolate onto the prepared baking sheet, spreading with a rubber spatula into a smooth layer almost to the edge.
  6. Quickly add the marshmallows to create your snowmen, then add the pretzel arms and lastly add the sprinkles, for snow.
  7. Allow the bark to set completely in the refrigerator, about 30 minutes. Once hardened, break into 9 pieces about 1 ounce each.

  • 2 smoked ham hocks (1 1/4 lb. total)
  • 2 (14-oz.) cans chicken broth
  • 2 (1-lb.) pkg. prewashed chopped fresh collard greens
  • 1/2 cup chopped sweet onion (from 1 onion)
  • 2 Tbsp. light brown sugar
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. kosher salt
  • 1 tsp. crushed red pepper
  • 1/2 tsp. black pepper

Directions

  1. Add ingredients to slow cooker.
  2. Cover and cook on LOW for 9 hours.
  3. Remove the ham hocks and any remnants of bone before stirring the greens.
  4. Cool ham hocks and thoroughly remove all fat and bones.
  5. Return the meat to the slow cooker. Stir the ham back into the greens, serve.
