Instructions
1. Preheat the oven and make the doughPreheat the oven to 375°F. In a bowl, whisk flour, sugar, and salt. Cut in the cold butter until the mixture looks like coarse crumbs. Add ice water a little at a time until the dough just comes together. Split into two disks, wrap, and chill for at least 30 minutes.
2. Roll and cutRoll one disk out on a floured surface into a large rectangle (about 1/8-inch thick). Cut into even rectangles (roughly 3×5 inches). Repeat with the second disk—you should have an even number.
3. FillPlace half the rectangles on a parchment-lined baking sheet. Spoon about 1 tablespoon of jam into the center of each, spreading slightly but leaving a border.
4. SealBrush edges with egg wash, top with remaining rectangles, and press edges with a fork to seal. Poke a few holes on top for steam. Chill for 10 minutes.
5. BakeBake at 375°F for 20–25 minutes, until lightly golden and cool completely.
