Ingredients
- 1 ripe banana, mashed
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ teaspoon nutmeg
- ½ cup chopped walnuts or pecans, optional
- ½ cup chocolate chips, optional
Instructions
1. Prepare the Oven
Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Cream the Butter and Sugar
In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.
3. Add the Banana
Mix in the mashed banana, egg yolk, and vanilla extract until smooth and well combined.
4. Combine the Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
5. Make the Dough
Gradually add the dry ingredients to the banana mixture, mixing just until combined. Fold in the walnuts, pecans, or chocolate chips if desired.
6. Scoop the Cookies
Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
7. Bake
Bake for 10–12 minutes, or until the edges are lightly golden and the centers are just set.
8. Cool and Serve
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
