1½ lbs beef stew meat

2 tbsp olive oil

1 onion, chopped

3 carrots, sliced

3 potatoes, chopped

3 cloves garlic, minced

3 cups beef broth

1 tbsp tomato paste

1 tsp dried thyme

1 bay leaf
Instructions
1. Season and searSeason the beef generously with salt and pepper. Heat olive oil in a large pot over medium-high heat and brown the beef on all sides to build flavor.
2. Build the baseAdd the chopped onion to the pot and cook until soft. Stir in garlic and tomato paste and cook for about 30 seconds until fragrant.
3. Add the veggiesStir in the carrots and potatoes, coating them in the flavorful base so everything starts cooking evenly.
4. Pour and seasonPour in the beef broth, then add thyme and the bay leaf. Stir well, scraping up any browned bits from the bottom of the pot.
5. Simmer low and slowBring the stew to a gentle boil, then reduce heat to low. Cover and simmer for about 45–60 minutes, until the beef is tender and the vegetables are soft.
